Tallgrass Brewing Company was founded by Jeff Gill in 2007 with the goal of bringing quality craft beers to the Midwest. Located near the Flint Hills in Manhattan, Kansas, Tallgrass now offers a full line of award-winning, world-class craft beers. In 2010, Tallgrass switched from bottles to 16 oz. cans, and in 2015, moved into a new 60,000-square-foot facility, establishing it as a major regional brewery. Cascade Brewing was founded in 1998 by owner Art Larrance and brewmaster Ron Gansberg. Together, Art and Ron put their 40 years combined beer experience to work, designing and installing Cascade`s 10-barrel brewing system in Southwest Portland, then creating and distributing well-balanced traditional ales. Sour beers really came about by default. The pair had followed the trends of traditional ales and were growing tired of what they referred to as the “hops arms race” of ever-hoppier beers, especially in the Northwest. Both wanted to focus instead on beers that offered an intense sensory experience other than hops. They considered what they could draw upon from the region: an abundant supply of wine barrels from the nearby wine country, and access to delicious and plentiful local fruit.
